Amylase is a digestive enzyme predominantly produced by your pancreas and salivary glands that helps your body break down carbohydrates. The pancreas is an organ located behind the stomach. The pancreas creates enzymes that help to break down food in your intestines. If the pancreas becomes inflamed or damaged, it can produce too much or too little amylase. This test measures levels of pancreatic amylase in the blood.
